Why It Matters
One of Spain's state-run Paradores network, housed in a genuine 15th-century monastery. The building has lived multiple lives — convent, humanist school, courthouse, prison — before becoming a hotel. The El Bodegón tavern revived the nearly forgotten cocido de taba stew recipe in 1998 and now draws pilgrims from Madrid every winter weekend.
A 15th-century Augustinian monastery in the heart of medieval Chinchón, about 50km southeast of Madrid. The old chapel is now a one-of-a-kind suite with a canopied bed and chandelier bathtub. The outdoor pool sits in what used to be the monastery stables, and the glazed cloister houses a serious collection of religious art. Wes Anderson filmed Asteroid City here in 2023 — Tom Hanks slept in these rooms.

The famous circular Plaza Mayor — an actual working bullring with a sand floor — is a short walk from the property. The town has marked cinematic walking routes past locations used in Spanish and international films. A monthly Pamplona-style bull run ends at the plaza.
The monastery grounds include formal French-style gardens with cypress trees, roses, privet hedges, ancient wells, fig trees, magnolias, loquats, and chestnuts. The glazed cloister is filled with a curated collection of religious art. Walking the corridors under beamed ceilings past museum-quality paintings is a genuine pleasure.

Daily guided tours of the historic building led by hotel staff. Takes in the chapterhouse, doctoral hall, original stables, old washrooms, glazed cloister with religious art, and other spaces that reveal the building's layered history as a 15th-century convent, humanist school, courthouse, and prison. Organised every morning.
The surrounding area offers hiking opportunities through the Tajuña valley, vineyards, and olive groves. Nearby lagoons (San Juan, San Galindo, Casasola) make for pleasant strolls, with ruins of Casasola Castle accessible from the last one.
Occasional live piano and guitar performances in the garden patios during summer evening dining service. Check with the hotel when booking — scheduling varies.
The surrounding Vega del Tajuña landscape is full of vineyards and olive groves. Nearby wine caves offer tastings of local wines. Chinchón anisette — made from matalahúga aniseed and protected by EU Geographical Indication — is the town's most famous product.
