Why It Matters

One of Spain's state-run Paradores network, housed in a genuine 15th-century monastery. The building has lived multiple lives — convent, humanist school, courthouse, prison — before becoming a hotel. The El Bodegón tavern revived the nearly forgotten cocido de taba stew recipe in 1998 and now draws pilgrims from Madrid every winter weekend.

A 15th-century Augustinian monastery in the heart of medieval Chinchón, about 50km southeast of Madrid. The old chapel is now a one-of-a-kind suite with a canopied bed and chandelier bathtub. The outdoor pool sits in what used to be the monastery stables, and the glazed cloister houses a serious collection of religious art. Wes Anderson filmed Asteroid City here in 2023 — Tom Hanks slept in these rooms.
