Why It Matters
Rastrello is a rare thing: a genuinely family-run boutique hotel with deep roots in its community, a working olive farm on site, and B Corp certification for both the hotel and its olive oil. It's one of the few places in rural Umbria with Design Hotels and Michelin Guide recognition, plus Marriott Bonvoy points capability.
A 500-year-old palazzo — once an olive oil farm — converted into a 16-room boutique hotel that opened in 2020 in the medieval hilltop village of Panicale, Umbria. Every room faces the valley and overlooks Lake Trasimeno. The hotel produces its own award-winning, B Corp-certified extra virgin olive oil from roughly 1,000 trees, most of them 400 years old. Its name, "rastrello," is the Italian word for the small hand rake used to harvest olives.

Learn pasta-making and Umbrian classics directly from the hotel's chefs using produce from Rastrello's harvest and local farms. You'll leave knowing the techniques behind why Italian cooking works — and able to recreate it at home.
A monthly communal pasta dinner open to guests, locals, staff, and family — a tradition that gave birth to the hotel's own cookbook 'Spaghettata: Love and Pasta from Panicale', collecting pasta recipes from the village's grandmothers (Nonnas). One of the most authentic things you can do at Rastrello.
Walking, hiking, and biking trails start directly from Panicale and wind through the olive-covered hills and down to the lakeside. The surrounding landscape is genuinely lovely and easily explored on foot or by bike.
Join the Wassmann family and friends during the annual autumn olive harvest. Teams lay out nets and hand-pick olives from the grove below Panicale — the same grove Rastrello's family has tended since 1995. A genuinely communal, tactile experience unique to autumn visits.
Learn how to officially taste EVOO, understand why it's one of the world's healthiest foods, and identify quality in oils from the Lake Trasimeno area. You'll be introduced to local olive varieties found only in this specific region — including varieties from Rastrello's own 1,000-tree grove, most of which are 400 years old.
Curated visits to local wineries within a short radius of the hotel, all of which have a personal relationship with Rastrello. The hotel's wine list is sourced exclusively from these nearby cantinas. A private driver can be arranged for wineries further afield; some are walkable from the hotel.
The hotel's reception and lounge host a rotating exhibit by local Italian artists. Rastrello also sponsors artists-in-residence visits to encourage work inspired by the Umbrian landscape and culture.
Go into the forest with a local truffle hunter and their dog to search for Umbria's prized seasonal truffles. After the hunt (fingers crossed), guests are served a lunch showcasing the truffle as the star ingredient. Must be booked at least 2 days in advance.
