Riad El Amine Fès is a 19th-century Arabic-Andalusian palace in the ancient Medina of Fès, opened as a hotel in 2008 after three years of restoration by Fassi craftsmen. It's family-managed — the owners studied hospitality in France and Spain before returning to preserve their family's legacy — and that personal touch shows. With 21 rooms and suites, an indoor courtyard pool, hammam, three dining and bar concepts, and a rooftop with 360° medina views, it punches above its weight for old Fès.
