Sodade
Warm and contemporary: solid wood furniture, blue-and-green color palettes, natural materials throughout. Unpretentious but polished. More 'good-taste farmhouse' than 'design hotel showroom.'
Book the Château de Couffour dinner when you book the hotel room — the two-star restaurant fills up fast and the valet transfer is a nice touch.
Why It Matters
It's the more affordable gateway into the Vieira culinary universe. The sister two-Michelin-star restaurant at Château de Couffour is a short valet ride away. The hotel's own bistronomic restaurant holds a Michelin Bib Gourmand. Menus starting at €35 make this serious food at honest prices for rural France.
Sodade takes its name from the Portuguese word for longing or nostalgia — a nod to the late Bocuse d'Or-winning chef Serge Vieira's Lusitanian roots. His wife Marie-Aude now runs the show alongside chef Aurélien Gransagne, keeping the two Michelin stars alive at the hilltop Château de Couffour restaurant nearby, while the hotel in the village center offers 18 four-star rooms and its own Bib Gourmand bistronomy restaurant at considerably more accessible prices. Chaudes-Aigues is a small thermal village in the Cantal mountains — the kind of place you'd drive past without stopping if you didn't know what was there.

How you'll actually spend your days.
The town's main thermal center, about a 5-minute walk from the hotel. Chaudes-Aigues has Europe's hottest natural springs (82°C) and a full spa and hydrotherapy complex. This is a separate facility, not part of the hotel.
Book the two-star Restaurant Serge Vieira at Château de Couffour for the full Vieira experience. Hotel guests can arrange a valet service up the hill to the château. This is the main reason most guests choose to stay at Sodade.
Located 550 metres from the hotel, this museum explains Chaudes-Aigues' unique geothermal history. Interesting context for the town's famous hot springs.
The Aubrac plateau — volcanic highlands, rivers, and meadows — is right on the doorstep. Great for walking, cycling, and driving. The source of the Par river and the gorges of the Truyère are close by.
