This is Amsterdam's grande dame — a 600-year-old building that's been a medieval convent, royal lodgings, the Dutch Admiralty headquarters, and the city hall before Sofitel turned it into a five-star hotel in 1992. French designer Sybille de Margerie drew on the building's legendary occupants to shape the interiors: Dutch beams, canal views, and a formal grandeur you don't find in new-builds.
