Why It Matters
The restoration was overseen by Israel's Antiquities Authority, with Italian artisans flown in specifically to restore the painted ceilings. The hotel sits atop the remains of a 1,500-year-old Byzantine structure and a 900-year-old Crusader cellar. Its owner Uri Jeremias also runs Uri Buri, named one of the world's best seafood restaurants by TripAdvisor in 2019.
