Hiramatsu Atami is built around a concept as simple as it is rare: a world-class French restaurant that happens to have 13 rooms attached. Founded by chef Hiroyuki Hiramatsu — a Francophile who modeled the idea on out-of-the-way French auberges where you stay because the food is too good to leave — the hotel sits on a steep hillside above Atami Bay, about 45 minutes from Tokyo by Shinkansen. The architecture is a conversion of a 1985–88 private sukiya-zukuri country villa, all dark timber, washi screens, and exquisite joinery. Every single room faces the ocean.
