Why It Matters

Tillingham is a biodynamic winery, working farm, and boutique hotel set across 70 acres of rolling East Sussex countryside, about 10 minutes from Rye. Forty-four thousand vines, free-roaming livestock, a walled kitchen garden, and a Green Michelin Star restaurant all share the same ancient 13th-century farmstead — Dew Farm. Rooms sit in a converted hop barn, interiors are by Rye-based studio McCully & Crane, and everything from the soil philosophy to the bathroom amenities (Fill, zero-waste refill) reflects the estate's no-chemicals, low-intervention ethos.

A 90-minute guided walk through the vineyard and winery, tasting four of Tillingham's biodynamic wines. The tour covers the estate's low-intervention winemaking philosophy, the Georgian qvevri technique (wine aged in buried terracotta urns), and a look at how the biodynamic farming actually works. Tours run daily at 11:00, 14:00, or 16:00 depending on the day. Max 7 people on a public tour. Private tours available for groups of 8 or more at £50/person.
