Winery
Farm-meets-natural-wine-bar cool. Understated, earthy and considered — think sheepskin rugs, pressed wildflowers, Roberts radios, and zero TVs. The crowd is food- and wine-curious, not spa-and-pool seekers.
Book the wine tour in advance — it fills up fast in summer and runs at 11:00, 14:00, or 16:00 depending on the day. £40 per person for 90 minutes.
Why It Matters
Holds a Michelin Green Star for its restaurant's commitment to regenerative farming — almost all produce comes from the estate's walled garden, surrounding farms, and Rye Harbour's daily catch. Uses ancient Georgian qvevri (buried terracotta urns) alongside modern equipment to produce around 40,000 bottles of low-intervention wine a year. One of England's most talked-about natural wine destinations.
Tillingham is a biodynamic winery, working farm, and boutique hotel set across 70 acres of rolling East Sussex countryside, about 10 minutes from Rye. Forty-four thousand vines, free-roaming livestock, a walled kitchen garden, and a Green Michelin Star restaurant all share the same ancient 13th-century farmstead — Dew Farm. Rooms sit in a converted hop barn, interiors are by Rye-based studio McCully & Crane, and everything from the soil philosophy to the bathroom amenities (Fill, zero-waste refill) reflects the estate's no-chemicals, low-intervention ethos.

How you'll actually spend your days.
70 acres of ancient woodland, vineyard rows, and grassland to walk directly from the doorstep. A trail through the vineyard leads to a viewing platform with sweeping views of the vines deep into the Sussex countryside. Wellington boots and umbrellas available to borrow at reception.
Occasional foraging workshops run throughout the year. Check the events calendar ahead of booking.
A 90-minute guided walk through the vineyard and winery, tasting four of Tillingham's biodynamic wines. The tour covers the estate's low-intervention winemaking philosophy, the Georgian qvevri technique (wine aged in buried terracotta urns), and a look at how the biodynamic farming actually works. Tours run daily at 11:00, 14:00, or 16:00 depending on the day. Max 7 people on a public tour. Private tours available for groups of 8 or more at £50/person.
The kitchen walled garden is where most of the restaurant's herbs and vegetables are grown using no-dig, companion planting, and cover-cropping methods. Guests can explore freely. The farm also has cattle, sheep, pigs, goats, and chickens roaming the estate.
Regular special events including winemaker dinners, craft courses, wellness days, and exhibitions. Worth checking the What's On calendar on the official website before booking.
Weekly group yoga sessions on the estate. One-to-one sessions can also be booked in advance.
