A working country estate that happens to have one of the world's best restaurants on it. Cats from the family wander the property. Michel and Marie-Pierre's personal contemporary art collection hangs in every room. The design uses wood, glass, greige, blue and red — warm and idiosyncratic rather than formal or fussy. Getting here is genuinely inconvenient; that's part of the point.
Book the restaurant and hotel simultaneously — they fill up months in advance, especially Friday and Saturday dinners.
Why It Matters
One of the very few restaurants to hold three Michelin stars for over 55 consecutive years. Also holds a Michelin Green Star for sustainability, a Michelin Key for the hotel, and a Relais & Châteaux membership since 1966. Ranked #3 globally on La Liste 2026. The entire estate — with its permaculture vegetable garden, beehives, persimmon plantation, orchard, pond, forest and pastures — directly feeds the kitchen.
Four generations of the Troisgros family put this patch of Loire countryside on the culinary map. Jean-Baptiste Troisgros started it all in Roanne in 1930; the restaurant held three Michelin stars for over 55 consecutive years before the family moved the whole operation to a 17-hectare country estate outside Ouches in 2017. Today, 4th-generation chef César Troisgros runs the kitchen at Le Bois sans Feuilles, and in 2026 La Liste ranked it third-best restaurant in the world. The hotel, Le Bois Dormant, has 15 rooms spread across the main manor and the converted Maison des Kakis, all designed by Marie-Pierre Troisgros with art loans, personal collections, and a pronounced sense of home rather than hotel.

Children are welcome to eat at the chefs' table in the kitchen while parents dine in the restaurant. Babysitting service also available at €15/hour.
17 hectares of grounds to explore on foot: forest paths, a large pond, permaculture vegetable garden, persimmon garden, orchard, meadows and pastures. Wellington boots ('botterie') available at the hotel.
Marion Troisgros operates Le Pré Cheval, an equestrian centre a few minutes' walk from the estate. Offers trail rides (1–1.5 hrs), lead-rein walks for young children, and arena lessons for all levels up to Galop 7. Horses and ponies are bred and trained on-site.
Mountain bikes available for guests to explore the estate and surrounding countryside.
The estate's working permaculture vegetable garden, beehives, persimmon and pepper tree plantation, and orchard are all open for guests to wander. Many ingredients on the restaurant menu come directly from here.
The hotel prepares a picnic basket for guests on request at €40 per person — ideal for a meal by the pond or in the park.
