Villa Haute Guais is a five-room luxury maison d'hôtes built in 1880 and set in a one-hectare wooded park above Prieuré Bay, looking straight across at the ramparts of Saint-Malo. Designer Sophie Bannier went unapologetically bold with the interiors: statement headboards in Vanderhurd fabrics, eclectic wallpapers, original Odorico mosaics, Chesterfield sofas, and room names borrowed from British aristocracy. It sits right on the chemin des douaniers coastal path — a private wicket gate in the garden leads you down to the beach. Guests dine together at a shared table under Chef Rémi Ledauphin, formerly of Hotel Castelbrac.
