Masseria Cervarolo
Rustic-elegant Puglian farmhouse. Think original doors repurposed as headboards, driftwood towel racks, and antique furniture that looks artfully battered rather than precious. The aesthetic is genuinely authentic rather than designer-rustic. Solar-powered, EU Ecolabel certified. Unpretentious in the best possible way.
Ask for Room 9 — the former palmento where winemakers crushed grapes, with the original cisterna visible under the bed, plus its own private garden.
Why It Matters
One of the most genuine masseria hotels in Puglia. The combination of 16th-century architecture — including rooms carved out of an old cistern and a former palmento wine-pressing room — with a serious open-kitchen restaurant, weekly cooking and folk-dancing classes, and deep family hospitality sets it apart from slicker competitors. Tablet Hotels and Mr & Mrs Smith selections.
A sun-bleached 16th-century stone farmhouse on a hillock 6km outside Ostuni, complete with traditional conical trulli scattered across the grounds and an 18th-century chapel with original frescoes and a baroque altar. Family-owned by Teo and Patrizia, it runs like a big Italian household: dinner is served to all guests at once, there's an honesty bar in the kitchen, and the owners eat alongside you. Small enough that everyone knows your name by day two.

How you'll actually spend your days.
An 18th-century baroque chapel on the masseria grounds with original altar and frescoes. The hotel's own lore says it was once a pilgrimage destination. Open to guests — a five-minute walk from the main building.
Weekly during summer. Learn to make pasta, bread, and pastries in the farmhouse kitchen. Classes led by the team — guests get hands-on with orecchiette and other Puglian staples. The kitchen doubles as the hotel bar/cookery school, so it has a very natural, lived-in feel.
Explore the surrounding Valle d'Itria countryside among centuries-old olive groves on bicycle. Available through the masseria's experiences programme.
Rejuvenating treatments in the traditional stone lamietta outbuilding. Designed for deep relaxation.
Hands-on workshops teaching guests how to make olive oil soap using produce from the estate. A useful skill to take home, and very on-brand for a Puglian masseria.
Weekly dancing lessons teaching traditional Puglian folk dances. Patrizia and Teo host these. The homemade liqueurs beforehand reportedly help with Dutch courage.
The masseria's sommelier runs wine tastings, including sessions with local Puglian producers. The restaurant stocks over 80 Puglian wines. Ask Teresa (the sommelier) about producer tastings before dinner.
