Why It Matters
Sister property to Borgo Egnazia. One of the few masserie in Puglia with a fully vegetarian restaurant helmed by a dedicated chef (Massimo Santoro), using produce from the estate's own gardens, olive grove, and 250 fruit trees. A zero-waste operation with no single-use plastic.
A former olive-oil mill turned 19-room boutique hotel, Le Carrube is about as authentically Puglian as it gets. Limestone walls, vaulted ceilings, whitewashed courtyards, and an estate-grown all-vegetarian restaurant make it stand out. It's the quieter, more intimate sibling of Borgo Egnazia — and that connection gets you access to a world-class spa and beach club without the resort pricing.

Classic Double
The entry-level rooms here, though 'entry-level' at a Puglian masseria still means stone vaults, whitewashed walls and rustic antique furniture. Simple and quiet. Some look out over the inner courtyard.
Double Room
Individually furnished with rustic pieces in soft colours. Can come with a private patio, terrace, or a view over the inner courtyard and the ancient carob tree that names the masseria.
Family Suite
The largest option, comfortably sleeping six. Master bedroom is separate from the living area for privacy. The terrace reportedly has glimpses of the sea over the ancient olive trees.
Junior Suite
Double bed plus a living area with sofa bed — practical for couples who want extra space or families with one child. All the same stone-and-whitewash character as the rest of the property.

How you'll actually spend your days.
Hands-on class in traditional Puglian cooking. Choose between making orecchiette, taralli or panzerotti by hand, then taste what you've made. Led by the masseria team in a warm, authentic setting.
Guests can use the Cala Masciola beach club in Savelletri (belonging to sister hotel Borgo Egnazia), a 15-minute drive away. Watersports available including SUP and wakeboarding. Boat tours can also be arranged.
Hack through the countryside and olive groves of the Valle d'Itria on horseback. Arrangeable through the hotel.
Guided olive oil tasting using the estate's own production. Ostuni is built on olive country — this is as local as it gets. Reservation required, extra charge applies.
Wine tasting featuring Apulian varieties including salice salentino. Can be arranged on request with advance booking.

Estate includes an olive grove, 250 fruit trees, lemon and prickly pear trees, bougainvillea-draped courtyards and a kitchen garden. Much of what the restaurant serves is grown here.
Private parking spots outnumber rooms at the masseria — no issues even in summer.
Dogs welcome on request, €40/night. Note that some rooms do not have outdoor space — specify when booking.
Lower pool is set in a former sheep corral with sun-heated stone walls, stone deck, and metal sunloungers — shallow at one end, deeper at the other. Upper lap pool offers scenic countryside views and is fed by fountain taps. The lower pool area also has a dedicated children's pool section.
