Why It Matters
The Experimental Group built its reputation on impeccable taste and killer cocktails. Translating that DNA to a restored Balearic farmhouse actually works — the result is one of the most design-forward rural hotels in Spain, with serious food credentials and a genuine commitment to the local ecosystem (solar panels, ozonated saltwater pool, no single-use plastics, on-site garden supplying the kitchen). Menorca itself is a UNESCO biosphere reserve, which gives the setting a legitimacy that louder Balearic islands can't match.
A 19th-century Menorcan finca on 30 hectares of southern coastline, converted by the Paris-born Experimental Group into a 43-room agroturismo that takes itself seriously without taking itself too seriously. Designer Dorothée Meilichzon kept the golden Marés stone and original bones intact, then layered on bold terracotta headboards, LRNCE textiles from Morocco, and squiggly blue-and-white staircases that feel more artist's retreat than five-star hotel. Nine of the rooms and villas have private dipping pools. The cocktails are exceptional — this is, after all, the group that started with the Experimental Cocktail Club in Paris — and the restaurant, led by chef Sylvain Roucayrol, pulls heavily from the on-site vegetable garden and Menorcan producers.
