Awarded 1 Michelin Key in 2025. The spa is carved from the palazzo's original underground water cistern, 7 meters below street level. The 15-meter pool is the only one in Ostuni's historic center. Restaurant 700 is a genuine local fixture — open to the public and well-regarded in its own right.
Paragon 700 is the only red-brick building in Ostuni's famously all-white hilltop centro storico — and that contrast is entirely deliberate. Swiss design duo Ulrike Bauschke and Pascale Lauber spent two years gutting and restoring the former Palazzo Rosso, a building that has been a convent, a police barracks, and the residence of Ostuni's first mayor. The result is 15 individually designed rooms and suites where frescoed ceilings coexist with South African 'boma' bathtubs, Moorish vaulted arches, and furniture sourced from flea markets across four continents. And in the courtyard, completely hidden from the street: Puglia's only hotel pool.

Deluxe Room
Three rooms ranging from 23–29 sqm — the most compact option at Paragon 700, but still individually styled and far from generic. One in the annex has a small balcony over a quiet street with a spacious walk-in shower. One on the first floor of Palazzo Rosso has a private Turkish bath in the shower area. The third has elevator access and overlooks the garden. All have king beds and walk-in showers.

Deluxe Suite
Five suites ranging from 28–40 sqm, each decorated with a distinct eclectic scheme. One has a 7-meter frescoed ceiling with a stone fireplace (ideal for winter). Another has a South African 'boma' repurposed as a bathtub beneath painted vaulted frescoes. A third has a balcony over the lively street below. One annex suite has a private jacuzzi on a double terrace — the only jacuzzi in the hotel. One has elevator access. All have king beds (2m x 2m), and some can be converted to twins.

The flagship. At 55 sqm with ceilings nearly 6 meters high, it's anchored by an imposing stone fireplace flanked by two tall windows. The king bed (2m x 2m) sits center stage. There's a sunken oversized bathtub set into the French parquet floor — positioned so you look straight up at frescoed ceilings while soaking — plus a separate enclosed bathroom with double walk-in shower. A private terrace overlooks the full 1,700 sqm garden and pool.

Petit Deluxe
The smallest room in the hotel, but designed with the same care as the rest. Features bespoke furnishings, a soothing color palette, and a balcony — making it a solid pick for solo travelers or couples who don't need vast square footage. Full standard amenities apply.

Five distinct suites ranging from 40–55 sqm, each with cathedral-vaulted ceilings and a king bed (2m x 2m). No two are the same. Highlights include the dramatic Onyx Black Suite — ground floor, 6-meter Moorish vaulted ceiling, all-black décor with warm lighting and brass fittings, open-plan bathroom with sunken rectangular tub for two. Other versions have private terraces with pool or garden views, outdoor showers with city rooftop views, or private street entrances with full independence.
